Description

Vinsanto is made by a selection of the best Trebbiano and San Colombano grapes, left drying on racks until December.
The must is pressed by hand and put into small chestnut and cherry casks with no additions whatsoever. It remains in casks for 5 years in our Vinsantaia in order to age, lulled by the sunshine and the sea breezes.
The Vinsanto’s beautiful dark amber colour with some reddish reflections is in harmony with it’s caramel aroma. An intense and persistent bouquet of dried fruit, apricots, and tamarind gives way to a dry finish and an excellent balance between sweetness, freshness and an intriguing savoury note.

Vintage 2011

A warm, rich harvest in color and taste.
The Trebbiano vineyards were sparse in bunches, and the production of Vin Santo was affected.
The quality, however, seemed to us immediately exceptional. We therefore pushed for a really long aging.
10 years in our cherry and chestnut barrels.
In the end, however, the bottles produced are very few.

We have jealously guarded them and reserved them all for us.
Why Why this is not Vinsanto but only Passito?
But does the name really make a difference?
